I want to thank Nabeela for nominating me for this super cool award! I was really excited about this one because I love food and cooking. It has become such a stress relief for me. Questions and answers:

1. What is your favorite Cuisine? Favorite food?

Ahh. This varies quite often but I guess I will go off my current cravings. Right now my favorite cuisine would be a mix of Mexican and Italian. (I can’t choose just 1!) I love a good steak taco or a steaming hot chicken parmesan. I actually just made my own for the first time just the other day!

2. What do you make for breakfast usually?

I just started eating breakfast last year because I was pregnant. If I didn’t have breakfast I would literally throw up until I did. I had a pretty harsh pregnancy Before then, I hated eating breakfast… it would actually make me feel sick.

Anywho, currently, I’ve been pretty satisfied with a fried egg and multigrain toast. While we are on the breakfast topic, Isaiah, my 8-month-old will have a scrambled egg after a bottle. Today I made him plantains! He really enjoyed it.

3. What is the best food you prepared so far?

I’m really impressed with my homemade pico de gallo, guacamole, and tortilla chips! I’ve never made any of that before from scratch so I was quite impressed with myself.

4. Share a memorable moment related to any food?

I was a really picky eater as a child all the way up to like 2/3 years ago. My mom kept my meals pretty simple but I always go back to my 1 favorite childhood meal which was a breaded chicken cutlet with white rice and some veggies. Whenever I eat it now I still get this sense of comfort and happiness.

Just recently I prepared a baby version of the meal and Isaiah loved it! It put the biggest smile on my face.

5. What flavor do you like in your Ice cream?

Hands down vanilla. Vanilla ice cream all day every day! (With rainbow sprinkles of course)

  1. Congratulations on the award- this is such a fun one!! Those chips with the guacamole and pico de gallo look so good. I love Mexican and Italian food too- we literally make lasagna and tacos like almost every week lol!

  2. Lol I’m ready for some chicken parm! I usually just use a mix of stir fried veggies for lasagna and tacos and if I want a more meaty taste I use the beyond beef patties but I crumble them because that’s way cheaper than using the beyond crumbles that are ridiculously expensive lol. I also really like the Lightlife and Gardien crumbles as well.

  3. Well I love chicken molé with cocoa and cinnamon sauce . Its so good , its savory but still got that chocolate taste. I recommend it to everyone . Also I love tamales ( usually the chicken kind) and Ceviche which is a raw food dish. Its prepared fresh with shrimp , fish, and sometimes octopus and squid . I read somewhere it originated in Peru but is popular in Mexico too . But its the raw seafood , spices , chili, lime and some other citrus juices . Its good but definitely for the adventurous lol . My mom was white but she tried to learn all the recipes from Dad and his family so I could grow up with some of the food culture🥰

  4. I’ve alwaaaays wanted to try chicken molè! Do you have any recipe recommendations? A tamale sounds great too. Ceviche is definitely for the adventurous! I’ve heard great things about it but I am not a seafood fan ): I’m so glad your mom kept up with the culture! Mexico is so beautiful. I had a better time exploring the local towns and stuff rather than being on the resort. I have a friend from Puebla and another who lives in Monterrey, so I’ve always been so interested in going back. 🥰

  5. Its so good . I need to go through my Mom’s handwritter recipe books but I have one that even uses Animal crackers in Molé. Its pretty good . But my Dad makes an easier one with the store bought Molé and chicken , of course you add chicken broth too . I’ll look for you sometime and send through IG. I still need to learn more Spanish . Last time I was down in Guadalajara I was using google translate plus the words my Dad taught me . Also one thing about Mexico that some may not know is every region has its own culinary culture. Thats pretty cool that you can visit your friends ☺️

  7. We have a lot of cases , so I’ve been staying inside for the most part . When I do go out I wear a mask . But other than that I’ve been doing well . Making some homemade chicken noodle soup the other day , added Italian seasoning , some other spices , parsely and little mini potatos and simmered for 5 hours . It came out awesome !
