Sunday Funday — Barbie & Eggplants

Hey there everyone and happy Sunday! I hope everyone has had a good weekend and if you’re on the East Coast, a safe one. Our first day of Fall consisted of Tropical Storm Ophelia, but she wasn’t too bad over by me. Anywho, I had a few different blog posts in mind for today but my mind shifted last minute and I wanted to share something light-hearted. Today I’ll be sharing all that I did today!

Wake Up Mom

Literally, I was woken up by my son saying “WAKE UP MOM”! I’m surprised he woke up as early as he did since we both went to bed pretty late last night. But, waking up at 9:15 am is a lot better than waking up earlier for work. Also, I was still able to lay in bed for a few more minutes until the little man got hungry.

I myself am not a breakfast person but Isaiah sure is, he specifically asked for sausages, cheerios and cold water. Who am I to knock his preference? Ha! Instead, I get my morning yoga out of the way as well as an additional 5-minute stretch to set good intentions for the day. My word of the day is going to be diligent. I want to get things done with purpose!

After my morning stretch sesh, I whipped out my passion planner to further plan for my day and if you’re not using a passion planner, then you need to get one! Nothing beats seeing your day in full and having a sense of control over it.

I think I’m in my Barbie era again…

It’s now 11:04, and I’m finally forcing myself to eat something! Let’s see; today’s brunch will be yesterday’s dinner which was fried chicken takeout! I added some biscuits on the side and boom. You have the perfect brunch.

Barbie Date

I’ve been dying to see the not-so-new Barbie movie and I finally did! My mom took the time out of her day to come with me to the movies. It was a nice time and a good movie although I did doze off a few times. This is why I rarely go to movie theaters… the setting always makes me too comfortable, and I doze off. I don’t think it’s because the movie was boring, I do think it’s because I went to bed after 2 a.m. last night.

After the movie, we went to Target to pick up a few things then made our way over to the grocery store so that I could get my ingredients for dinner.

Dinner

When I got home, it was already almost 5 o’clock so I had no time to do anything but start dinner. Today I made a stove top lasagna with roasted eggplant on the side. This was my first time making eggplant and it came out delicious! It was super easy too. My tummy was so full. I can’t wait to eat it again for lunch tomorrow.

After dinner, I sat down again to plan the rest of my evening. Can you tell I love planning? It consists of cleaning, blogging, emails, and hopefully reading. Which is why I’m going to cut this post short! It seems as if there is never enough time in the day. This post definitely highlights that Barbie and eggplants were the best part of my day.
